Had an idea while cooking this evening that I could save time by trying to chop onions into small pieces by using a cheese grater instead. After attempting to do this, I have been reminded that not all of my ideas are good ones. Not only does this not work, but it also basically sets off a chemical warfare to your eyes in your kitchen, and the onions come out as sludge. 2/10 - would not recommend

@benjojo grated onion is 100% a thing, and I have used it in a few Indian dishes, but yeah, it's like a paste and guarantees maximum aerosolisation of the eye stingy bits.

@gsuberland @benjojo I tried once to put onion in a food processor for similar reasons, but ended up with a really foul paste that was incredibly bitter and didn’t cook well. Maybe I was just doing it wrong?

@0x47df @gsuberland @benjojo I often blend an onion and cook it with ghee to make a curry sauce for someone with texture issues and you do have to cook it for a surprisingly long time to cook out the rawness.

@0x47df @gsuberland @benjojo My grandparents used their Moulinette for exactly that purpose on a regular basis. But you have to make sure you blend them only for maybe 3x 0.5s.

@0x47df @benjojo yeah, it releases a lot of the bitterant. you have to cook it low and slow for a long time if you're going to use it directly, or be cooking something where the bitterness is the idea. works well in curry sauces where you're using something like sweetened condensed milk, where the bitterness balances out the sweetness.

@benjojo nah mate, love my Microplane. Super sharp grater for hard cheeses, less sharp one for softer cheeses like cheddar. You want the sharpest possible implement to cut onion. The fewer cell walls breached, the less chemical warfare. But even with a sharp grater, onions are going to exact their revenge on your eyeballs. Hope the meal was worth it.

@benjojo, I think my grandma used to use the grater for grating onions when making meet patties (she put onions inside them). Worked fine for her, I guess. Maybe eventually you just get used to the chemicals.

@tmcfarlane @benjojo, if I'm not mistaken, we actually call this side/type of grater "svogūninė tarka" (onion grater) in Lithuania.
Note that this is the side that essentially turns your vegetable into a smoothie. 😀

@benjojo Just use an electric chopper Beavis! My wife and I use one and makes chopping an onion easy and quick.
